Baked Chick Pea Falafel


Falafel are croquettes made with chick peas and have been a staple in Middle Eastern countries for millennia. Traditionally they are deep fried, but as a healthier option these are baked. They are great as a snack or a side dish.

Chickpea Falafel

Method

  1. Preheat oven to 190°C.
  2. Gently fry the onion until soft, add the garlic, chilli flakes, cumin and coriander and stir until fragrant.
  3. Cover the bulgur wheat with the boiling water and leave to stand.
  4. Combine all the ingredients in a food processor and blitz until smooth and well mixed.
  5. Allow the mixture to rest for 15 minutes.
  6. Shape into small balls and place on a baking tray. Spray with olive oil.
  7. Bake for 25-30 minutes until golden, turning once.
  8. Serve with fresh salsa.

1½ cups Epicure Chick Peas
½ cup bulgur wheat
¾ cup boiling water
1 medium red onion, finely chopped
2 cloves garlic, crushed
¼ tsp dried chilli flakes
1 tsp ground cumin
1 tsp ground coriander
2 tbsp lemon juice
1/3 cup breadcrumbs
2 tbsp chopped fresh coriander
2 tbsp chopped fresh parsley
olive oil spray
