Butter Bean Tagine


A ‘tagine’ is actually the cooking vessel traditionally used by nomadic tribes of North Africa, but has since become the term used to describe a certain style of cuisine. This vegetarian tagine is a quick and easy recipe for 4.

Butterbean Tagine

Method

  1. Heat the olive oil in a pan and gently fry the onion until softened.
  2. Add the sweet potato and ground spices and stir until fragrant. If the spices stick add a splash of water. Stir the garlic around for a minute. 
  3.  Add the butterbeans and stock and bring to the boil, reduce the heat and simmer for 10 minutes.
  4. Add the tomatoes, tomato paste and lemon juice and simmer for 15 minutes. 
  5. Serve with couscous and garnish with parsley and orange zest.

Ingredients


2 tins Butter Beans
1 tin Cherry Tomatoes
1 tbsp Sundried Tomato Purée
2 tbsp olive oil
1 onion, finely diced
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp ground coriander
½ tsp chilli powder
400ml vegetable stock
1 sweet potato, cut into cubes
4 cloves garlic, crushed
Juice ½ lemon
To garnish: freshly chopped parsley and orange zest
