Floating Islands in Vanilla Sauce


When you are entertaining you don't want to spend all your time in the kitchen.  This rich and indulgent dessert is a great way to finish a meal and is ready in minutes.

Floating Islands

Method

  1. Make meringues by whisking the egg whites together with the sugar until the mixture reaches stiff peak stage.
  2. In a wide saucepan add the jar of Epicure Vanilla Sauce and the milk together and heat. 
  3. Drop a large spoonful of the meringue mixture into the liquid in the saucepan. 
  4. Poach the meringue at a simmer until firm for about 3-5 minutes. 
  5. Serve two meringue islands with some sauce from the pan and drizzle over with epicure toffee sauce.

1 jar Epicure Vanilla Sauce
2 large egg whites,
4oz caster sugar
100ml of milk
