Mango Sorbet


This is a great as cooler on a hot day or as a mouth watering palate cleanser at the end of a meal.  Using mango slices in syrup means you don't get yourself and your kitchen covered in juice.

Mango Sorbet

Method

  1. Combine the sugar and water in a small saucepan over a medium heat.
  2. Stir until the sugar dissolves.  Brush down sides of the pan with water to ensure all sugar crystals dissolve.
  3. Boil for 2 minutes, transfer to a small bowl and coll to room temperature.
  4. Combine cooled sugar syrup, sliced mangoes, 2 tablespoons of lime juice and egg white in a blender.  Blend until smooth.  Add remaining lime juice to taste.
  5. Transfer to a plastic container and place in freezer, stirring every half hour for the first 2 hours to break up any crystals.  Alternatively, freeze in an ice cream maker.
