Method
- Combine the sugar and water in a small saucepan over a medium heat.
- Stir until the sugar dissolves. Brush down sides of the pan with water to ensure all sugar crystals dissolve.
- Boil for 2 minutes, transfer to a small bowl and coll to room temperature.
- Combine cooled sugar syrup, sliced mangoes, 2 tablespoons of lime juice and egg white in a blender. Blend until smooth. Add remaining lime juice to taste.
- Transfer to a plastic container and place in freezer, stirring every half hour for the first 2 hours to break up any crystals. Alternatively, freeze in an ice cream maker.
