Chorizo Pepper One Pot Pasta

  • 200g cooking chorizo, sliced
  • 1 green pepper, chopped
  • 400g rigatoni
  • 1 tin Epicure Chopped Tomatoes with Garlic
  • 100ml creme fraiche

    Heat a deep non-stick frying pan over medium heat with a splash of oil. Add chorizo in a single layer and cook until browned and cooked through, tossing occasionally. Tip in green pepper and cook until softened.

    Stir in tomatoes along with 600ml water. Add a good pinch of salt along with the pasta. Simmer, uncovered, for 10-12 min (or according to packet instructions), stirring often, until pasta is al dente and liquid is absorbed. Feel free to add a splash of water if the liquid is absorbed but the pasta needs more time.

    Once cooked, stir in creme fraiche, taste and season. Top with a sprinkling of fresh herbs, if you like.
