A quick breakfast muffin using store-cupboard staples. The cinnamon and apple sauce make these comforting muffins perfect to enjoy along with a strong cuppa.

  • 225g plain flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • ½ teaspoon fine salt
  • 95g dark brown sugar
  • 100ml cold-pressed rapeseed oil
  • 1 teaspoon vanilla extract
  • 2 medium free-range eggs
  • 1 jar Epicure Apple Sauce

    Preheat oven to 200ºC, gas mark 6. Line a 12 hole muffin tin with muffin cases.

    In a medium bowl mix together the flour, cinnamon, baking powder, salt, and brown sugar until well blended.

    In a separate bowl whisk together the oil, vanilla, eggs, and apple sauce until well combined.

    Pour the wet ingredients into the dry ingredients and stir gently until no streaks of flour remain.

    Pop in the oven and bake for 18-20 minutes, or until a cocktail stick inserted in the center comes out clean. Let cool for 5 minutes before removing to a wire rack to cool completely.
