Bacon Baps with a twist. Crispy bacon, creamy avocado, fresh watercress, and drippy eggs in brioche buns smothered in our piquant brown sauce.

  • 12 rashers smoked streaky bacon
  • 4 medium eggs
  • 4 brioche rolls
  • 4 tablespoons Epicure Brown Sauce
  • 1 avocado, sliced
  • 20g watercress

    Crisp the bacon in a large frying pan set over medium heat. Take them off when you think they are not quite done, to ensure tenderness, and place on a kitchen towel lined plate to drain.

    Meanwhile, cook the eggs over medium-low heat in a tablespoon of oil until the whites are set but the yolks are runny. Season with salt and pepper.

    Split the buns and spread the bottoms with 1 tablespoon brown sauce each. Top each with 3 rashers of bacon, ΒΌ of the avocado slices, 1 egg, and a small handful of watercress. Pop on the top and enjoy.
