Tuscan Bean Soup DF

A quick, hearty, and comforting soup. For extra flavour wilt in a handful of spinach, add a grating of parmesan, or sprinkle with parsley.

  • 1 small onion, diced
  • 2 cumberland pork sausages, removed from casings
  • 1 pack Epicure Tuscan Bean Mix with Pearl Barley
  • 1 tin Epicure Chopped Tomatoes with Basil
  • 2 teaspoons concentrated stock

    Cook sausages in a medium saucepan set over medium heat, until cooked through, breaking them up as you go. Add onion, with a pinch of salt, and cook until tender. Tip in Tuscan bean mix, tomatoes, 250ml water, and stock. Bring to a simmer and cook for 5-10 minutes. Season to taste before serving.
