Crab Canape DF

  • 2 tins Epicure Dressed Crab
  • 1 tablespoon Epicure Smoked Garlic Mayonnaise
  • 1 tablespoon chopped chives
  • 1 teaspoon lemon juice
  • 2 stalks celery, finely chopped
  • ¼ teaspoon smoked paprika
  • salt and pepper, to taste
  • To Serve
  • 1 lemon, cut into wedges
  • handful of watercress

    Preheat oven to 180ºC, Gas Mark 4.

    Trim off the ends of the baguette on a diagonal and cut into 2cm pieces. You should have 12 slices. Place on a baking tray and brush lightly with oil and season with salt. Pop in the oven and bake for 10-12 minutes or until crisp throughout. Let cool before topping.

    In a medium bowl, mix together crab, garlic mayonnaise, chives, lemon juice, celery, and smoked paprika. Season with salt and pepper, to taste.

    Spread the crab mixture over the cooled crostini. Top with a few sprigs of watercress, and plate up with wedges of lemon to serve.
