If you haven’t made hot water crust pastry before, don’t be intimidated, it’s one of the easiest pastries to make. Use this to make our mini pork pies and impress your friends at your next picnic feast.

  • 100g Epicure pork fat
  • 350g plain flour
  • ½ teaspoon salt
  • 1 medium egg yolk

    Add pork fat along with 150ml water to a saucepan. Set over medium and let pork fat slowly melt. Once melted, raise heat and bring to a boil. Allow to boil for 30 seconds.

    Meanwhile, mix flour and salt together in a medium bowl. Make a well in the center and add the egg yolk. Cover over with flour to protect from the liquid.

    Pour over boiling water and pork fat, mixing as well as you can with a spoon. Then let sit until cool enough to handle, and knead well. Now you’re ready to make some mini pork pies!
