Maple Grilled Peaches with Nut Praline

Sweet and crunchy praline matched with warm sticky peaches fried in maple syrup. It is an addictive combination. Of course, a scoop of vanilla ice cream just brings it all together.

  • 1 tin Epicure Sliced Peaches
  • 2 tbsp Epicure Maple Syrup
  • 250g caster sugar
  • 75g mixed nuts

    To make the praline, line a baking tray with baking paper. Pop the sugar in a saucepan and set over a low heat, allowing it to melt slowly for about 5 minutes. Shake the pan occasionally to ensure it melts evenly. Keep a very close eye on the sugar as it caramelises and it turns glossy and golden.

    When fully caramelised, remove from the heat, add the nuts and quickly stir until they are fully coated. Immediately pour the praline mixture onto the prepared baking sheet.

    Allow to cool completely before breaking into small pieces. You could also blitz in a food processor to get a finer crumb.

    Next, place your peach slices into a non-stick frying pan and cook on a high heat until each side starts to brown. Reduce the heat and add the maple syrup. Cook for a further 2-3 minutes until the peaches start to caramelise.

    Place a scoop of ice-cream on a plate and scatter the peaches around it. Sprinkle with the nut praline and drizzle with a little extra maple syrup for good measure.
