Mediterranean Chicken Traybake

So much of our cooking is inspired by our travels. Here we're whisked off to sunnier climbs and our favourite eateries by the Med for a simple one-tray chicken roast.  It's simply packed with summer flavour that you can enjoy year round.  Enjoy!

  • 1 pack Epicure Meditteranean Seasoning Mix
  • 800g roasting potatoes, peeled and quartered lengthways
  • 1 red onion, cut into wedges
  • 8 skin-on whole chicken thighs
  • 12 baby plum or cherry tomatoes
  • 100g Epicure Manzanilla Olives (stoneless green olives)
  • 100g feta cheese, cubed

    Pre-heat the oven to 200 degrees c/gas mark 6. Place the chicken thighs in a bowl and sprinkle over the Seasoning Mix. Add in a drizzle of olive oil, mixing well to coat the meat evenly. Set aside.

    In a large roasting tray add the potatoes, 2 tbsp olive oil and season well with salt and pepper. Turn to coat and roast for 20 minutes.

    Add the onion and marinated chicken returning to the oven for a further 20 minutes.

    Scatter in the tomatoes and olives before roasting on a slightly higher heat for another 20 minutes and before crumbling over the feta cheese.

    Serve with a fresh salad of your choice.
