Mediterranean Salad V GF

A hearty salad, delicious on its own for lunch or with grilled chicken for dinner. Toss with your favourite Mediterranean vinaigrette or simply dress with olive oil and red wine vinegar.

  • 1 pack Epicure Mediterranean Bean Mix
  • 1 cucumber
  • 2 large vine tomatoes
  • ¼ red onion
  • 125g feta cheese

    Tip the bean mix into a large bowl. Chop the cucumber and tomatoes, dice the onion. Toss with the bean mix and season well with salt and pepper. Crumble feta over and drizzle with desired dressing. Refrigerate for at least 30 minutes, or for several hours, to let the flavours meld.

  • Fiona Hi, the dressing was a simple oil, lemon juice dressing seasoned. However, included in the recipe were large handfuls of chopped fresh mint and parsley - that’s what really gave the who salad it’s delicious, fresh taste. Using really good quality virgin o
