Quick Braised Celery with White Wine and Sage GF

If you’re looking for a quick side to a roast chicken, grab a tin of our celery hearts and serve up this quick braise.

  • 15g unsalted butter
  • 1 tin Epicure Celery Hearts, cut into 8 pieces and pat dry
  • 6 sage leaves
  • 1 teaspoon Epicure Chopped Garlic
  • 50ml dry white wine
  • 100ml chicken stock
  • pinch salt

    Melt the butter in a deep frying pan (with a lid) over medium-high heat. Once hot, add the celery and sage. Cook for two minutes, until browned on the bottom, then flip and cook for an additional minute, until browned on the other side.

    Tip in the garlic and cook for 30 seconds. Stir in the wine and cook for 1 minute more. It should be simmering vigorously at this point.

    Add the chicken stock and a pinch of salt. Once it comes to a simmer, turn the heat to low, pop on the lid and let simmer gently for 5 minutes.

    Remove from heat and season to taste. Serve with the sauce spooned over top.
